Irish moss (carrageenan), is traditionally used to solidify puddings, but it can also be used to thicken soups and sauces. Washed and cut it can be eaten in salads. Irish moss is dried in the sun after picking. The reddish-brown seaweed then fades to a yellow-brown color.
Irish Moss must be soaked like gelatin and then boiled for it to gel. It is an ideal binding agent for soups, smoothies and shakes. It can also be used as a gelling agent in raw cakes and pastries or can be added to salads. Rinse the Irish Moss well with water and soak it in lukewarm water for about 4-24 hours. Then you can get a gel by putting it in the blender with water to create a creamy gel, let it rest for 1 hour. Carrageenan provides a jelly with a softer texture than agar.
Irish Moss is used in cough medicine all over the world for its antiviral and expectorant properties for respiratory infections and to soothe coughing. Cook Irish moss with ginger and lemon to make an emollient drink.
Sour ingredients such as lemon are best added after cooking when the carrageenan has cooled.
Irish Moss contains a good balance between vitamins, minerals and trace elements. It also has a high magnesium content. Carrageenan is Irish for small rock, given a meaning because of the steadfast position of this delicate seaweed for many generations.
Irish moss tea
Boil 1.5g of Irish moss in 150ml of water, or a tablespoon of Irish moss in 1 liter of water. Let it boil until you get some kind of gel (approx. 15 minutes).
Drink seven and more cups a day.
You can flavor this Irish moss tea with, for example, lemon, licorice, cinnamon, ginger and possibly a natural sweetener.
